Can I somehow get access to the user interface of the Survey and Curriculum portlets? May I click on the 'Add' links on the 'Manage Applets' page (*)? (I can't find survey/curriculum on the 'Customize Portal Layout'page.)

yes, please add those applets. It's an oversight that they have not been added.
