Why does the events_orders table not reference ec_orders
anymore?  In the data model (events.sql), ec_order_id in the
events_orders table is commented out.

Is there a reason for this?  I want to be able to take ecommerce
orders for registration for events.

Hi,

I think that is commented out because the events module have that feature but is not enable by default, they just wanted to have it ready for ecommerce purpouses, so if you want to have it working you will need to uncomment it and then see how actually it works with the ecommerce module to enable online payment.
