More specifically, is it safe to use the OpenACS deb packages with fink (http://fink.sourceforge.net/) and have an easy install for OpenACS? I can imagine that getting OpenACS up and available for the web design community that uses macs might give OpenACS a real boost in the arm in terms of enhancing the user community

Search for something like "Mac OS X" and you'll get a bunch of hits to thread on the subject (along with hits to garbage since the search functionality here's pretty lame) ...

People have been successful in getting OpenACS up and running on OS X.

3: In regards to fink (response to 1)

It would be pretty cool to have OpenACS 4 install from the fink
package manager.  This entails making sure that OpenACS 4
dependencies are also available under fink (PostgreSQL,
AOLServer and relevant modules) and then making sure that the
OpenACS 4 package calls the other packages as
dependencies.

I haven't looked at the details, but I have used fink.  Personally, I
think the GNU Darwin (http://gnu-darwin.sourceforge.net/
download.html) based on FreeBSD ports might be a better way
to go.

There are a few other package distribution systems out there as
well.
