I've been wanting to do something like this, too.
I'd like to see something like lifewithqmail.org for OpenACS so folks can just cut and paste from the docs to get a working installation. I even registered lifewithopenacs.org a while back, but frankly, I don't see how I'll have time this year to do anything with it.
I'd recommend using a stock Red Hat distro and things don't have to be installed from rpms if the steps to download, compile, and configure the components are clear, concise, and correct. I'd recommend running it out of inittab instead of daemontools to simplify things.
We could add a section on advanced topics (like at lifewithqmail.org) where things like daemontools, .LRN, etc. could be discussed.
