I'd very much appreciate any advice on how to change the administrator|s email account, the one that appears in "Ask a question username@localhost".  Thanks!

This may work (as admin):
http://YOURDOMAIN/pvt/home

Or try:
sitemap (http://YOURDOMAIN/admin/site-map/)
ACS Kernel [set parameters]
system-information
