The reason groups makes no sense to me is that if you have 1000 organizations in your contact list, you have 1000 groups to create. Also, an organization could be one person.
Realize though that when this was written, many of the enhancements in performance etc. weren't in OACS. So, I guess if no one else objects, it is not that big a deal to me.
It shouldn't break compatiblity though.
AFA, organization_type, again, if the upgrade script moves this out of the organization datamodel and changes are made to the package to look in the new place, go for it. I just hate to break someones code, as I don't know who is using this besides Jade.
