The course editor we are working on here at the university of mannheim could also be helpful. We could create whole course repository on all the different subjects you listed above.
The editor second version will generate docbook and scorm/ims compliant courses that we could offer on openacs.org using ernie's lors package.
So what we need is an upgrade and redesign of the current openacs.org site.
