Does anyone know if i change the folders as it's on the debian docs: from "/var/lib/aolserver" to "/home/service1"...
do i need change something else than /etc/config.tcl?
should i do that or not?

No, afaik. Of course, you have to adjust your -t parameter of your aolserver startscript accordingly.
